PEANUT BUTTER & CHOCOLATE COOKIE POPS

DIRECTIONS:

COOKIES

Step 1

Preheat oven to 325F and line a large baking sheet with parchment or a silicone liner.

Step 2

In a large bowl, whisk together the peanut flour, Swerve Sweetener, baking powder, and salt. Stir in the melted peanut butter, melted butter, egg, and vanilla extract until dough comes together.

Step 3

Roll dough into scant 1 inch balls and place 2 inches apart on prepared baking sheet (you should get 24 balls). Flatten to 1/2 inch thick with the palm of your hand, and then create a hatch pattern with a fork to flatten a bit further.

Step 4

Bake 12 minutes, and then remove and let cool completely.

CHOCOLATE FILLING

Step 1

In a small saucepan over medium heat, bring cream to just a simmer. Remove from heat and add chopped chocolate. Let sit a few minutes and then whisk until smooth. Let cool to lukewarm.

Step 2

In a large bowl, beat cream cheese and butter until smooth. Beat in sweetener, cocoa powder and vanilla extract. Add chocolate mixture and beat until well combined, scraping down beaters and sides of bowl as needed.

TO ASSEMBLE

Step 1

Spread the bottom of one peanut butter cookie with about 2 teaspoons of chocolate filling. Top with a second cookie. Insert a popsicle stick into the frosting. Lay on a wax paper lined plate or cookie sheet. Repeat with remaining cookies and frosting.

Step 2

Chill until set.

Makes 12 sandwich cookies.
