COLLAGEN PROTEIN MUFFINS

Step 1

Preheat the oven to 350F and line a muffin pan with silicone or parchment muffin cups.

Step 2

In a large bowl, whisk together the coconut flour, collagen, Swerve, baking powder, and salt. Stir in the eggs, butter, water, and vanilla until well combined, then stir in the chocolate chips.

Step 3

Divide the mixture among the prepared muffin cups and bake 20 to 25 minutes, until firm to the touch and golden brown. Remove and let cool completely in the pan.
