Lemon Bars
Recipe type: Dessert
For the crust:
  • 2 cups all-purpose flour, sifted
  • 1 cup Swerve Sweetener Confectioners Style
  • 1 cup butter, melted
For the filling:
  • 6 large eggs, room temperature
  • 3 cups Swerve Sweetener Granular
  • 2 tablespoons grated lemon zest
  • 1 cup fresh lemon juice
  • 1 cup all-purpose flour
  • Swerve Confectioners' sweetener, for dusting
  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, mix 2 cups flour and Swerve Confectioners' Style.
  3. Add melted butter and mix well.
  4. Remove from mixing bowl and press into the bottom of a 9 x 9 inch pan.
  5. Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack.
For the filling:
  1. Whisk together eggs, Swerve Sweetener, lemon zest**, lemon juice, and flour.
  2. Pour mixture over the crust and then bake for 30 to 35 minutes, until the filling is set.
  3. Let cool for 30 minutes.
  4. Cut into desired shape and dust with Swerve confectioners’ sweetener.

    I was excited when I saw this recipe, however, I eat Low-Carb. I’ll just have to see what I can do to make substitutions. I keep forgetting that sugar-free, doesn’t mean low-carb. Oh well. Looks delicious!
